With the Fair Work Commission’s latest minimum wage hike pushing public holiday penalty rates for kitchen hands to over $78 an hour, independent operators are being backed into an unsustainable corner.

Fiercely advocating for our community, Di Bella is calling out the “obsolete” public debate around minimum wages and taking aim at critics who suggest struggling venues should simply shut down. Highlighting the razor-thin margins where a public holiday shift might yield a business just $35 in real profit, Di Bella argues that the industry is fighting an economy-wide cost-of-living problem, urging the government to address structural expenses rather than placing the burden entirely on local cafes.
